From a selection of the best Pignoletto di Romagna grapes, a Charmat of silky softness, which perlando caresses palate and nose with its livery of fruit and flower so fragrantly lively. Pignoletto grapes suitable for sparkling wine making are harvested manually and mechanically in the period of late August and early September. The vinification is carried out with a soft pressing. The fermentation takes place at a controlled temperature of 16-18C° to allow the development of fruity and floral aromas. The following sparkling wine is made in autoclave, at controlled temperature and pressure in order to develop the right perlage and the characteristic olfactory notes.
