Hand-picked in small crates, they ferment spontaneously with maceration on the skins for 9 days in small open vats with daily breaking of the cap of marc. Aged in 1 100 year old local oak barrel. Two decanting of clarification according to the phases of the moon before bottling.
Conestabile della Staffa is a historic winery that already in 1700 produced wine in Montemelino Magione, near Perugia, with 12 hectares of vineyards facing Lake Trasimeno on clayey and humus-rich soils located between 300 and 400 m above sea level. manages Danilo Marcucci, who after having collaborated with some of the most authentic realities in the panorama of Italian natural wines, gets back into the game with "his" company (the company belongs to his wife's family) and in its territory. The bottling activity ceased for 60 years in favor of the transfer to the social cellar (in the postwar period, in correspondence with the economic-industrial boom, the countryside depopulated in favor of the cities and the workforce became increasingly difficult to find), direct management of vineyards and winemaking since 2015, after 4 years of reflection and an idea of total dedication to nature. The activity in the vineyard is carried out only by hand and also in the cellar the practices are artisanal and traditional: spontaneous fermentations in open vats, hand punching down, maceration on the skins for longer or shorter periods, absence of temperature control, decanting for clarification. the phases of the moon and bottling without adding sulfur. The blends that give life to the production of the cellar belong to the history of the territory: Sangiovese Grechetto, Trebbiano Dorato, Canaiolo, Alicante, Malvasia, Uva Fumaiola and Gamay del Trasimeno.
