Harvesting period: first week of September, carefully selecting the grapes.
Vinification: after pressing, the grapes are pressed. The must is decanted and then stored in refrigerated autoclaves at a controlled temperature thanks to which the gas produced is retained during fermentation, thus generating the characteristic perlage. The fermentation takes place thanks to the addition of selected yeasts to enhance the organoleptic characteristics of the product.
Refinement: short bottle period.
Organoleptic characteristics:
Colour: golden yellow;
Bouquet: ample and intriguing, reminiscent of fresh fruit;
Taste: persistent with a fair acidity very balanced with the residual sugar.
Tasting temperature: 8-10°C.
Food pairing: excellent as an aperitif, it accompanies every dessert in particular dry pastries.
